Easy Self-Cook #1: Wine-Flavoured Chicken Soup Noodle

It was New Year Day's eve and I wanted to prepared something special for dinner. I remembered the wine-flavoured chicken soup instant noodle that a friend of mine bought for me from Taiwan half a year ago, so I went to the supermarket to get some ingredients to prepare a similar meal.

I prepared these:

  • 2 x chicken drumstick

  • 1 packet of chicken broth

  • 1 stalk of local lettuce

  • 1 serving of noodle

  • gourmet-use Hua Diao wine (salted)

  • wolfberries

  • optional condiments: parsley flakes, chilli flakes, roasted garlic bits

The differences between that instant noodle bowl from Taiwan and what I prepared were the fresh chicken, fresh lettuce and I used chicken broth instead of seasoning powder. My cooking was less salty, of course.

Follow these easy steps if you are interested to try it:

Step 1: Wash the drumsticks (defrosted) and lettuce.

Step 2: Pour the chicken broth into a pot and boil it. Add about 150 ml of water to dilute the broth.

Step 3: When the soup is boiling, put the two drumsticks in and let it boil for 10 minutes.

Step 4: Add in some wolfberries.

Step 5: When the soup is almost ready, add in 40 ml of Hua Diao cooking wine. The heat will evaporate the alcohol, leaving behind the wine's fragrance.

Note: The gourmet-use wine is already salted, so not too much of it and no further seasoning required. On a side note, if I were to prepare this dish again, I would use unsalted wine and add it to the soup after turning off the heat to retain more of the wine's fragrance.

Step 6: The chicken soup is done. Turn off the heat if you just want the soup. Add in some parsley (flakes) if you like.

Step 7: Keep the heat on and throw in the noodle (you can use any noodle you like).

Step 8: Put the lettuce in and let it boil for about 30 seconds. Then, off the heat.

And the wine-flavoured chicken soup noodle is done! Add in other condiments to your own liking.
