Tiong Bahru Hainanese Boneless Chicken Rice (中峇鲁海南起骨鸡饭) started in Tiong Bahru Market, serves Hainanese chicken rice, and has earned Michelin Guide’s recommendation since 2016. It has since opened several branches throughout Singapore and one of them is a stall located in Get Together Coffee Shop, a private-owned coffee shop chain, in Bukit Batok.
This post is on the Bukit Batok branch.
Apart from its signature Hainanese steamed chicken rice, the stall also serves roasted chicken rice, and other roasted delights including roasted pork and char siew (barbecue pork). There are chicken / roasted pork curry noodle and shredded chicken hor fun as well and also side dishes.
A standard steamed chicken or roasted chicken rice will be served boneless with flavoured rice, a bowl of soup and a side of pickled mustard. The rice is flavoured with chicken stock and has a nice aroma and delightful taste. The soup has a mild spiciness from Sichuan pickled vegetable or zha cai (榨菜).
The Hainanese-style steamed chicken is served the traditional way with the chicken chilled to solidify the gelatinous skin for better taste and texture. The meat is very tender and juicy and there is not much fats under the skin. It is really good.
The roasted chicken is served slightly warm and has tender meat that is nicely roasted, not dry and still juicy. This is nice too.
Without a doubt, both the steamed and roasted chicken rice are delicious. If undecided on which type of chicken to go for, there is an option to choose a combo of both steamed and roasted chicken meat in a single dish.
