Xiang Xiang Hunan Cuisine (湘香.湖南菜), founded in 2009, is a Singapore-based chain of restaurants specialising in authentic Hunan dishes. Known for using fresh, premium ingredients like Iberico pork and Wuchang rice, the restaurant offers a menu rich in chilli and garlic flavours. Xiang Xiang's Bukit Panjang outlet is located in Basement 1 of Hillion Mall — facing ToriGO! (鸡の达人).

Most dishes on Xiang Xiang's menu are "mild" in spiciness by default, and may request for either "no spicy" (not all dishes), "less spicy" or "more spicy". The top 3 signature dishes are Hunan Stir-Fried Pork (湖南小炒肉), Golden Broth Sour and Spicy Fish (金汤酸菜鱼) and 18-Second Angus Beef Stir-fry (18秒小炒安格斯牛肉). The dishes are prepared using traditional techniques and adapted to local flavour. Packet snacks and ice-creams are free-flow and unlimited.

The 18-Second Angus Beef Stir-Fry (18秒小炒安格斯牛肉) uses slices of Angus beef to stir-fry with fresh chillies and garlic in just 18 seconds and served in a wok on fire. The soft, tender beef is mild-spicy with garlicky aroma. It is nice to eat the chunky garlics too. It will be best to take the wok off-fire after a while or finish the dish fast to prevent the beef from over-cooking. This delicious dish is definitely must try.

The newly-introduced, non-spicy Homemade Sauce Kampong Chicken (密汁甘榜鸡) is served over fire with half a kampong chicken and thick rice noodle in a flavourful broth with red dates, wolf berries, spring onions, shallots, etc. The chicken meat is very tender and separate from the bones easily. This is nice too.

The Claypot Tofu Stew (沙锅豆腐煲) — opted for "no spicy", is served with cuts of dense tofu in a sweet-savoury sauce with ingredients (minced meat, soy beans, garlic, spring onions, etc). The sauce has delightful flavours, not salty, and goes very well with rice.

The Stir-Fry Spicy Cabbage (炝炒包菜) is meant to be a mild spicy dish where white cabbage is to be stir-fried with fresh / dried chillies in savoury sauce. When "no spicy" is requested, chillies will not be added resulting in a dish with crunchy cabbage in a mellow, delightful oil-sauce. The non-spicy version has nice taste but keeping the default spicy option will enhance its flavour more than just spiciness.

So far, the dishes we tried at Xiang Xiang have really nice flavours, and they sure are adapted to local preferences without the strong-tastes expected of Hunan food and definitely low in saltiness. Will definitely go back for more, especially the other signature dishes.
