Sandakan Eat: Good Taste Bak Kut Teh (好味肉骨茶) Seafood Bak Kut Teh

Sandakan is well-known for seafood as it began as a trading and fishing port, so it is a must to go for fresh seafood when visiting the second largest city of Sabah. To have seafood and yet something not-so-common, it will be “seafood bak kut teh”. And Good Taste Bak Kut Teh (好味肉骨茶) is one of the local restaurants to serve it.

Located in Bandar Nam Tung, Sandakan, and near to Kampung Pukat Fisherman Village, Good Taste Bak Kut Teh serves several styles of bak kut teh, or pork ribs soup, using pork ribs, pork belly, pig trotter, pig offals, meatballs or seafood. Surprisingly, beef and chicken for bak kut teh are also on the menu — but subject to availability.

For seafood bak kut teh, other than the "seafood" option that includes mixes of fresh prawns, squids and fish meat as main ingredients, each of the ingredients can also be ordered separately — i.e prawn bak kut teh, squid bak kut teh, fish bak kut teh, etc.

The name "seafood bak kut teh" does not mean "seafood, pork ribs and tea" literally. It should be interpreted as "seafood cooked in bak-kut-teh-style".

The seafood bak kut teh is served with seafood in a bowl of dark soup with shredded ginger and spring onions. There are slices of fresh fish, squid, prawn, fish sticks and tofu puff stuffed with fish paste. The gingerly soup with freshness of seafood offers a different taste experience from the usual pork-based bak kut teh.

Unlike pork ribs, which cost more and usually served in few long or short ribs with bones, a bowl of seafood without bones will be more meaty than pork ribs.

When ordered with seafood bak kut teh, cut fried dough is served with its own bowl of soup, instead of as a side dish to be added to the seafood soup. The soup, for the fried dough, has the familiar garlic-peppery flavour as expected from normal pork ribs soup — it is probably better tasting than dipping fried dough in gingerly seafood soup.

The lettuce, or probably any other vegetables, is boiled in a bowl of soup with dark soy sauce. The lightly boiled lettuce retains most of its freshness and crispness.
