Singapore Eat: A Noodle Story Singapore-Style Ramen @ Amoy Street Food Centre

"A Noodle Story" is the name of a hawker stall in Amoy Street Food Centre. The stall is known for its unique "Singapore-style Ramen", which is a fusion of Hong Kong-style wanton mee with Japanese ramen. It is the only dish served at the stall and recommended by Michelin Guide since 2016. Expect a long queue and long waiting time during lunch time.

The regular Singapore-style Ramen features premium ingredients, like ultra-tender pork belly slices, crispy potato-wrapped prawns, soy-flavoured hot spring egg with lava yolk and crunchy prawn wantons, on their signature thin noodle and garnished with freshly-cut scallions and strings of red pepper. The springy noodle is tossed in home-made sambal and hae bee hiam (spicy dried shrimp) that give the dish additional fragrance, flavours and some spiciness. It is a delicious and wonderful dish to indulge in.

After many years with just 1 item on its menu, A Noodle Story introduced an extra "Signature" option for its Singapore-style Ramen with some difference in ingredients rather than simply upsizing it. I will have a go at it on next visit.
