He Zhong Carrot Cake (合众菜头粿) in Bukit Timah Food Centre has been around for many years and sells only fried white carrot cake — not the usual white carrot cake that one might expect — and is really good at it.
He Zhong's traditional white carrot cake is fried till crisp — but not too hard and crispy — with eggs and dried radish. Unlike other carrot cakes that are often in small and loose pieces, He Zhong's fried carrot cake is bound in one large piece by the eggs when frying and cut into four squarish pieces before serving.
When spicy is requested for the dish, the chilli is fried with the carrot cake instead of being added to the finished dish cold. The spiciness is spread out evenly to enhance the flavour of the carrot cake, not to make it too spicy for the tongue. The carrot cake is fragrant with aroma of the dried radish, savoury and taste very good when eaten hot. A must-try if you have yet to try this style of carrot cake.
He Zhong Carrot Cake has two stalls in Bukit Timah Food Centre and are spaced two units apart. Both stall are used to prepared their white carrot cake, especially during peak hours.
