Singapore Eat: Jue Yan Lor Mee (觉彦卤面) @ Bukit Batok West

Jue Yan Lor Mee (觉彦卤面) is a noodle stall in Bukit Batok West Hawker Centre that specialises mainly in lor mee (braised noodle in starchy gravy). Aside from several variants of lor mee, with different ingredients, on the menu, there is also a Fish Bee Hoon Soup (鱼肉米粉汤) dish.

Jue Yan’s lor mee is the same base for all its lor mee dishes with different add-on ingredients. The noodle, a choice between flat yellow noodle (default) and mee sua (wheat vermicelli), is added with half a braised egg and beansprouts and drenched in a starchy gravy with egg drop. Condiments such as cut chillies, chilli paste, minced garlic, vinegar and coriander can be added separately to tune the noodle dish to taste. The savoury gravy has a viscosity that is neither too wet nor too thick and with nice flavours — go easy on the condiments, especially the spicy chilli paste.
The Signature Lor Mee (招牌卤面) is added with a variety of ingredients — braised lean pork meat, fried fish fillet and fried yam — to the base ingredients. The dish is delicious and offers multiple textures and tastes.

The Chicken Cutlet Lor Mee (鸡扒卤面) comes with cuts of fried chicken cutlet on the lor mee base. The chicken meat is tender and has crispy batter.

Jue Yan's lor mee are delicious. They are great dishes to go for at any time of the day.
