Loja Sopa De Fita Cheong Kei / Cheong Kei Noodle House (祥记面家), a family business since the 70s, serves a wide range of dry / soup noodle dishes and is well-known for its specialty shrimp roe dry noodle (虾子捞面). The Michelin Guide-recommended noodle house is located along Rua da Felicidade, or Fulong New Street (福隆新街), in Macau Peninsula, right next to the flagship store of Koi Kei Bakery.

The dry-style Signature Shrimp Roe Noodle (招牌虾子捞面) is Cheong Kei's special dish where thin, hand-pressed noodle is dry-tossed and topped with dry shrimp roe and scallion. The noodle is firm, springy and flavoured by the savoury shrimp roe. The dish is served with a bowl of savoury soup, which is said to be cooked with dried prawns and dried plaice for 8 hours. This delicious dish is definitely not to be missed when in Macau.

The Ginger-Scallion Blanched Fish Skins (姜葱灼鱼皮) is a side dish where pieces of fresh fish skin are blanched, dribbled with light soy sauce and served with shreds of ginger and scallions. The fish skins are soft and gelatinous with mild flavours from the condiments.

The Prawn Dumplings Noodle (云吞汤面) is served with big dumplings, filled with prawn and minced pork, on thin noodle in the same flavourful soup. The dumplings have nice textures with crunchy, firm prawns in soft wrappers. A simple dish of blanched lettuce with light soy sauce is a nice accompaniment.

There is a long list of dry / soup noodle dishes and various side dishes to try at Cheong Kei. For travellers, the Shrimp Roe Noodle — and blanched fish skin — is definitely not to be missed.
