Hong Wen Mutton Soup (红炆羊肉汤), located in Beauty World Food Centre, is where I usually satisfied my cravings for mutton soup. After half a century of serving traditional herbal mutton soup, the stall is recognised by the Singapore Michelin Guide since 2022. Hong Wen's primary ingredients for their mutton soups are mutton, lamb tripes and tendons. The ingredients can be solely as it is or mix-and-match as desire.

Hong Wen's mutton soup used to taste gamier and more herbal, which I liked a lot. However, the mutton's gaminess is greatly removed these days to satisfy larger populace who prefers lesser gamey taste. Nevertheless, I still like the mutton soup here since I can have mixture of lamb tripes and/or tendons with lamb meat for more textures and rich, flavourful soup.

The non-greasy mutton soup is lightly herbal and added with wolf berries, ginger and has a unique sweet flavour and aroma. And accompanied by sweet-sour-spicy dipping sauce that goes very well with the meat.

The mutton is very tender, the lamb tripe is crunchy and the tendon, attached to bones, has varying textures from soft to crunchy. The dipping sauce adds additional flavours.

The boss will usually add two cloves of garlic to each bowl of soup. The garlic cloves have been thoroughly boiled in the soup, very soft and nice to eat. Many customers of Hong Wen love the garlics — and me too.

Hong Wen Mutton Soup has another branch in Maxwell Food Centre, which relocated from the old Bukit Timah Market & Hawker Centre that was closed in September 2024.
