Singapore Eat: Sin Xiang Kee (新祥记) Pig's Organ Soup @ Beauty World

Sin Xiang Kee (新祥记), a relatively-new stall in one corner of Beauty Word Food Centre, serves pig's organ soup and pig's organ porridge as its signatures. Other variants include different mixes of porky ingredients (lean meat, belly meat, pig stomach, pig liver, pork balls) with rice, noodle or porridge. The stall also serves braised pig trotter and several variations of braised pork mini hotpots.

The signature Pig's Organ Soup (招牌猪杂汤) has porky ingredients in clear soup flavoured with Chinese pickled mustard. There are lean meat, pork belly meat, pig stomach, pig liver, pork balls and beancurd with garnishes and they are fresh and tender. The soup is pleasant tasting without being too salty.

The other signature dish, Pig's Organ Porridge (招牌猪杂粥), is served with all its porky ingredients submerged in hot porridge. The heat from the porridge ensures that the lean meat, minced meat, pig stomach and pig liver are nicely-cooked. The porridge is added with adequate garnishes of sesame oil, pepper, fried shallots, spring onions, etc. Add a raw egg to enhance the flavour of the porridge.

The Century Egg & Lean Meat Porridge (皮蛋瘦肉粥) is served with lean pork meat underneath the porridge and topped with similar garnishes and small cuts of a century egg. Century egg porridge, added with a raw egg, has always been one of my favourites and so is this dish.

The Pork Ribs with Yam Pot (芋头排骨锅) is served hot, with a fire burning below it, with quite a large amount of braised pork ribs and yam in dark braised sauce. The pork ribs are meaty and savoury. The yam cuts are fried before braising till very soft yet did not melt in the sauce. The savoury dish is another great dish to try.
