Kent Thong Turtle Soup (金唐山瑞) is said to be a traditional Cantonese recipe for turtle soup, from the 1970s, than just the name of a stall in Chinatown Complex. The stall owner will brew the turtle meat with Chinese herbs for several hours before the highly-nutritional delicacy is ready to be served. The collagen of the soft-shell of the carapace is much sough-after by ladies. Aside from their Herbal Turtle Soup, the stall serves Herbal Black Chicken Soup (药材黑鸡汤) too.

The small-size Signature Herbal Turtle Soup (招牌药材山瑞汤) is served in a Chinese ceramic soup pot. There are turtle meat and cuts of soft carapace shell in the herbal soup. The clear soup has a mellow herbal flavour, not bitter and with light peppery-spiciness. The turtle meat is tender with a chewy texture, as expected, and the jelly-like soft-shell melts in the mouth. Aside from its health benefits, the herbal dish is delicious.

Kent Thong‘s herbal turtle soup is available in claypot too and will offer richer flavours than the normal soup. I will try that and the black chicken soup in subsequent visits.
